
Where did the sun go? Please dear Lord I hope that wasn’t the end of the British Summer. I have been walking around telling anyone that will listen that we are about to experience a veritable scorcher of a summer, permanent French Riviera weather. This is not based on any meteorological knowledge mind you, just a general ‘feeling in my waters’ which I find is usually just as reliable as the BBC weather forecast, if not more so.

As Boo in London pointed out, the lack of sun called for some meat. I didn’t have time to cook anything but I had some ham left over from lunch so I decided to make parma ham bundles a la Nigella Lawson.

Nigella’s recipe calls for parma ham, goats cheese and dried figs. I think I saw this on one of her Christmas programmes. Whilst they are a lovely idea I would have to win the lottery before I started offering these around as nibbles at a party.

I used a St Marcellin cheese instead of goats cheese and sundried tomato instead of fig. I also stuffed some pine kernels in for no other reason than that I recently bought a bag and I’m kind of obsessed with using them at the moment.
Also had a sausage sandwich and finished it all off with some left-over yoghurt with honey and raisins. I swear if I didn’t eat so much I’d have a physique to rival Scarlett Johansson.

Well you may or may not be interested to hear that I don’t have mish mash salad for my office lunch today.
I have just started the Total Greek Yoghurt 2 week vitality plan (Natalie was looking for volunteers). My lunch today is half a bulb of fennel, diced, mixed with half a tin (medium size) of tuna (recipe is for red salmon but not that keen on it) mixed with 1 tablespoon of Total yoghurt, lemon juice, pepper, teaspoon of mustard and chives. The above mixture is supposed to be spread onto a tortilla wrap but I find them totally bland so am eating this mixture spread on 3 Ryvitas (not the plain old boring variety but the exciting pumpkin seed and whatever variations that they now sell). Not feeling the vitality yet, but give it time – it is only day 1 after all.
Loved the recipe for aubergines yesterday. My mother used to fry them in oil and serve them with lots of chopped parsley but they soak up soooo much oil that I’ve given up with them. But the idea of roasting them is good and I will try it. I read somewhere that soaking the slices in milk first before frying them, maks them soak up less oil. I guess, if they’ve already soaked up the milk, they can’t soak anything else up… but I don’t know what flavour the additional milk makes…

Hahaha, meat! When it comes down to it you just can’t beat a sausage sandwich! The bundles look delicious, great idea to substitute the fig with sundried tomato. I find the little pips in figs a bit annoying sometimes. I had parma ham last night with some buffalo mozzarella, I agree it’s extravagant, bring on the lottery win!
